Ingredients
- Sweet Potato Fries: 2 large sweet potatoes, 2 tbsp cornstarch or arrowroot powder, 2 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, 1/4 tsp black pepper
- Spicy Mayo: 1/2 cup mayonnaise, 1–2 tbsp Sriracha or other hot sauce (to taste), 1 tsp fresh lemon juice, 1/2 tsp garlic powder, Pinch of salt
Instructions
- Step 1:
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Step 2:
- Peel the sweet potatoes and cut them into 1/4-inch thick fries. Try to make them as uniform as possible for even baking.
- Step 3:
- Place the fries in a bowl of cold water and soak for 30 minutes (optional, for extra crispiness). Drain and pat very dry with paper towels.
- Step 4:
- In a large bowl, toss the fries with cornstarch until evenly coated. Add olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss well to coat.
- Step 5:
- Arrange the fries in a single layer on the prepared baking sheet, ensuring they are not touching.
- Step 6:
- Bake for 15 minutes, then flip each fry and bake for another 12–15 minutes until golden and crispy. Watch closely during the last few minutes to prevent burning.
- Step 7:
- While the fries bake, prepare the spicy mayo: In a small bowl, mix mayonnaise, Sriracha, lemon juice, garlic powder, and salt until smooth. Adjust spice level to taste.
- Step 8:
- Serve the hot fries immediately with spicy mayo on the side.
