Ingredients

  • Sweet Potato Fries: 2 large sweet potatoes, 2 tbsp cornstarch or arrowroot powder, 2 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, 1/4 tsp black pepper
  • Spicy Mayo: 1/2 cup mayonnaise, 1–2 tbsp Sriracha or other hot sauce (to taste), 1 tsp fresh lemon juice, 1/2 tsp garlic powder, Pinch of salt

Instructions

Step 1:
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2:
Peel the sweet potatoes and cut them into 1/4-inch thick fries. Try to make them as uniform as possible for even baking.
Step 3:
