# Step-by-Step Directions:

01 - Set the oven to 425°F and line a large baking sheet with parchment paper.
02 - Whisk together all miso glaze ingredients in a small bowl until smooth, then set aside.
03 - Toss cubed squash with 1 tablespoon vegetable oil, salt, and pepper; spread in a single layer on one side of the baking sheet.
04 - Coat tofu cubes with 1 tablespoon vegetable oil and 1 tablespoon of the miso glaze; arrange on the opposite side of the baking sheet.
05 - Roast both squash and tofu for 20 minutes; flip gently, then brush with half of the remaining miso glaze.
06 - Return to oven for 10 to 15 minutes, until squash is tender and tofu develops a golden crust.
07 - Heat a large skillet over medium-high heat with a splash of oil. Place bok choy cut side down, sear for 2 minutes until lightly browned. Flip, add 2 tablespoons water, cover, and steam for 2 to 3 minutes until tender. Season lightly with salt.
08 - Arrange roasted squash, tofu, and bok choy on plates. Drizzle with the remaining miso glaze and garnish with scallions. Serve warm.
